More Than a Meal: What Is the Barboza Experience?

There’s a difference between serving someone dinner and creating an experience they’ll remember.


That difference is at the heart of everything we do at The Barboza Experience.

For me, food has never been just about putting something delicious on a plate. Of course, the food has to be exceptional. But some of the best memories we have around food aren’t only about what we ate. They’re about who was sitting across the table, what we were celebrating, the conversations we had, and how the evening made us feel.


That is what I want to create for every guest.



It Starts With the Guest


I don’t believe every event should come from the same menu.


A private anniversary dinner shouldn’t feel like a corporate event. A backyard celebration shouldn’t feel like a wedding reception. And an intimate wine dinner should tell a completely different story than a casual gathering with friends.


That’s why I like to start with the people.


What are you celebrating? What foods do you love? What season are we in? Do you want something elegant and refined, relaxed and interactive, or somewhere in between?


From there, we build the experience.



Elevated Doesn’t Have to Mean Uncomfortable


One of my favorite things to do as a chef is take something familiar and make it unexpected.


It might be a flavor someone remembers from childhood presented in a completely different way. It could be a seasonal Florida ingredient paired with a technique or flavor from another part of the world.


I love beautiful plating and refined techniques, but I never want the food to feel intimidating.

The goal is for a guest to look at a plate and think, Wow.


Then take the first bite and think, I want another one.


That’s the balance.



Seasonality Matters


Menus should change.


Florida gives us an incredible opportunity to work with seafood, citrus, tropical flavors, fresh produce and ingredients that naturally lend themselves to bright, exciting food.


As the seasons change, so should the experience.


Fall might bring roasted squash, warm spices, apples, pears and deeper sauces. Spring allows us to lighten things up with asparagus, herbs, berries and fresh vegetables. Summer gives us peaches, watermelon, tomatoes, corn and flavors that belong around a table with friends.


Instead of forcing ingredients onto a menu year-round, I would rather let the season help tell us what the menu should become.



The Details Are Part of the Food


One thing I’ve learned throughout my career is that guests notice more than chefs sometimes realize.


They notice the presentation.


They notice whether the evening feels rushed.


They notice the small garnish that makes a plate beautiful.


They notice when someone remembered a dietary restriction.


And they definitely notice when they feel genuinely taken care of.


Those details are why I use the word experience so often.


The meal is important, but hospitality is bigger than the meal.



Welcome to My Table


This blog is going to be another side of The Barboza Experience.


I’ll be sharing seasonal dishes, recipes, entertaining ideas, behind-the-scenes looks at events, menu development, cooking techniques and some of the lessons I’ve learned throughout my career in the kitchen.


I’ll also share some of the successes, experiments and probably a few things that don’t go exactly according to plan—because that’s part of being a chef too.


Most importantly, I want this to be a place for people who love food.


Whether you’ve attended one of our events, are thinking about having us cook for you, or simply want to make something incredible in your own kitchen, you’re welcome here.


Because at the end of the day, The Barboza Experience isn’t just about what we put on the plate.


It’s about what happens around the table.
